A TRADITIONAL BREWING PROCESS
SLOW BREWING
At Brasserie Nationale, we follow the slow brewing method. Our beers mature for 5 to 6 weeks, depending on the recipe, and are not pasteurised. This brewing method requires a primary fermentation phase of 8 days, followed by a maturation phase of around 27 days before the beer can finally be bottled.
REINHEITSGEBOT: THE LAW OF PURITY
Our brewing process is based on the Reinheitsgebot, the German purity law dating back to 1516, which defines the three unique materials used in brewing a beer: water, malt and hops. Yeast is added to the Reinheitsgebot as soon as it is discovered.
For Brasserie Nationale beers, we select only certified raw materials from the Greater Region (and from Bavaria for the hops) to guarantee the quality and flavour of our products.
QUALITY CONTROL
The role of quality control is to monitor and analyse every stage in the production of our beers, from the delivery of the malt to the filling of the bottles and casks.
In order to meet the demands of consumers and the market, strict and regular checks are carried out throughout the manufacturing process, both on the ingredients and on the process itself, to guarantee the total quality of our products.
Every day, our laboratory carries out almost 350 analyses, ranging from measuring the colour of the wort and the strength of the beer's head to the mineral content of the brewing water. The microbiology department monitors the health and hygiene of the entire production environment.
OUR QUALITY LABEL
We have created the Gëlle Flûte quality label, an exclusive label for the HORESCA sector. To obtain the label, establishments must undergo training and comply with the rules governing the proper pouring and serving of beer.
RESEARCH & DEVELOPMENT
In 2022, we inaugurate our microbrewery, De BrauAtelier.
The BrauAtelier, designed among other things as part of the brewing activities we offer, also allows our team of experts to carry out research and tests as part of the development of new recipes and brewing products.
The microbrewery is also open to the general public for tours of the brewery or the #BrewYourOwnBeer brewing seminar, a day-long brewing activity where you can create the beer of your dreams in the company of our brewmaster.
